2nQUE is a pitmaster team comprising of: Keith Swift, Julian Hernandez, Jim Saso and his son, Connor Saso.
2nQUE began their journey with barbecue cook-offs in 2013 where they participated at the Glenn-Colusa Cattlewomen’s event during Colusa Western Days.
“We won third place in the pork division last year,” said Jim Saso.
Later that year, the team competed at a rib cook-off in Dixon finishing 11th out of 34 teams.
“With some pretty good backyard barbecue’s these past few years, we thought it would be fun to see how we’d compare with others in competition,” Saso added.
2nQUE uses a secret recipe that has few constants, but they do change it up from time to time.
“Our sauce at this years Cattlewomen’s event was pretty good,” said Saso, “we may have to stay with that recipe for a while.”
The 2014 North State Barbecue Championship Series (NSBC) is a three meat Barbecue Cook-Off Championship featuring the top barbecue pitmasters from around the West Coast, where contestants will compete for over $25,000 in prize money and awards.
Along with twenty other teams, 2nQUE will prepare three meats, tri-tip, chicken and pork ribs.
“Our goal is to place in one of the three categories,” said Saso, “there is some great competition, but what matters the most is the best tasting food wins -anyone has a chance.”
The 2014 North State Barbecue Championship Series begins on Saturday, June 21st at the Win-River Resort & Casino, located at 2100 Redding Rancheria Road, in Redding, California. Public sampling starts at 1:30 pm.■
